Recipe for black beans stewed in a Puerto Rican style

Habichuelas Guisadas

Ingredients:

  • 2 cans of black beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 sofrito (store-bought or homemade)
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, garlic, green bell pepper, and red bell pepper. Cook until softened and starting to brown.
  3. Add the sofrito and cook for another minute to release the flavors.
  4. Add the bay leaf, oregano, cumin, salt, and pepper.
  5. Add the black beans and stir to combine.
  6. Add enough water to cover the beans by about an inch.
  7. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the liquid is reduced and the beans are tender and flavorful.
  8. Remove the bay leaf and serve hot.

Tips:

  • You can use store-bought or homemade sofrito.
  • You can adjust the spiciness of the dish by adding more or less chili pepper.
  • You can also add other vegetables to the dish, such as carrots or potatoes.
  • If you like your beans thicker, you can mash some of them with a fork while they are cooking.
