Habichuelas Guisadas
Ingredients:
- 2 cans of black beans, rinsed and drained
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 sofrito (store-bought or homemade)
- 1 bay leaf
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Olive oil
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the onion, garlic, green bell pepper, and red bell pepper. Cook until softened and starting to brown.
- Add the sofrito and cook for another minute to release the flavors.
- Add the bay leaf, oregano, cumin, salt, and pepper.
- Add the black beans and stir to combine.
- Add enough water to cover the beans by about an inch.
- Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the liquid is reduced and the beans are tender and flavorful.
- Remove the bay leaf and serve hot.
Tips:
- You can use store-bought or homemade sofrito.
- You can adjust the spiciness of the dish by adding more or less chili pepper.
- You can also add other vegetables to the dish, such as carrots or potatoes.
- If you like your beans thicker, you can mash some of them with a fork while they are cooking.
